Ohnoes, it's an essay!

In general
Cautious. He really wants to interact more with people, he really wants friends, but when you're an ex-assassin on the run it's good to be careful. Unless he knows you've been in situations very similar to his, he is not going to tell you the whole truth. He'll avoid talking about himself at all if he can. He doesn't want to draw attention to himself, and will try his best not to mention anything too distinguishing (like the amnesia).
Concerning how he talks, well, he's still not used to carrying on long conversations with people (as himself, that is). Awkward, short answers will happen. He's not good with small talk. He probably won't even think to ask you how the weather is.
But! He cares. He wants to do good. If you have a problem, he will try to help provide a sensible solution! He's good at being sensible for you. Of course, sensible doesn't really work in the face of high school drama or such, but...it's the thought that counts?
Just because he stays shut up about himself doesn't mean that he won't tell you exactly what he thinks of you or a situation if you ask or if it involves something he feels strongly about. In this respect, he's a very honest guy. He gets the concept of a few basic polite lies, but he'll mostly fail at those.
Making pop culture references will almost certainly just confuse him. He really has no idea. He didn't recognize Spidey, for god's sake. Needless to say, he will not be making any references himself.
Specific groups
He's best around kids. He likes kids, and has a very protective streak. He'll be easier, more confident, and more fun.
He'll also find you easier to talk to if you've got a military background, he feels that he's on firmer ground there. He'll be much less likely to talk to you if you have something to do with intelligence. He is very wary of those types.
He somewhat automatically bonds to people who have lost someone they love. He is also automatically protective of happy couples.
If your character has been experimented on in some way, he will sympathize and likely feel protective.
And at this point, because of Phoenix and Edgeworth,...he's actually likely to respond more positively to lawyers. What the hell.
Individuals(aka the FUN PART)
Marie: This is the key to understanding how important Marie is to Bourne. He can live without her. But without her, he doesn't really care if he lives. Yes, he'll do his best to stay alive, because it's the sensible thing to do and you can't really atone for past actions if you're dead. But with Marie gone he really wouldn't mind if he got killed. With Marie, he minds. She motivates him not only to try to make up for what he's done, but to have a long, fufulling life. With her. She's a grounding force, a comforting force, and just makes him incredibly happy. This happiness spills over into more optimism when talking to others, and being more socialble in general. Also, having someone he talks to all the time again is improving his conversational skills a bit.
Corinthian: Cori's the one person he's met through the comm that he trusts completely. You'd think he'd hold the years of nightmares against the guy, but...Bourne actually gets it. He can be totally honest with Cori and Cori won't judge, he'll be sensible. He understands what drives Cori, and Cori understands him. Cori is acting as another grounding force in Bourne's life, if a slightly pessimistic one. ...In fact, Cori may be his best friend.
Edgeworth: Edgeworth provides polite, intellegent conversation (Mind you, some of Bourne's ability to put up with Edgeworth is that he doesn't really have enough social skills to know how much Edgey's doing wrong.). The fact that Edgeworth, like Bourne, went through (and defeated) the worst fear virus early on helped to establish sympathy. Bourne respects Edgeworth. He's smart, reasonable, doing good work, someone that can he can discuss serious and somewhat less serious issues with well. That Edgeworth has a past he's not proud of makes Bourne feel something of a connection between their situations.
Phoenix: Bourne admires Phoenix. He agrees with many of Phoenix's beliefs, but knows he could never be that open and...pure in the pursuit and defense of them. This is why if Phoenix is having a problem, he really feels a need to help. Because the world needs people like Phoenix, these people should be supported. And Phoenix is sensible, a trait Bourne has great appreciation for. Also, bonding over being disturbed by Genie's video post.
Jeremie: Of all the kids on the comm, Jeremie's the one that Bourne's really "adopted." He's a smart, sweet kidwho gets into locked posts. Kids shouldn't have to spend their free time saving the world. So he really wants to do what he can for Jeremie (and by extension Aelita).
Daisuke: Another really sweet kid that he wants to help along as he can. He also just finds that talking to Daisuke is very cheering. This effect is probably partially responsible for him thinking of Daisuke a bit more as an equal.
Dark: Dark is refreshing. He's fun, but understands and knows how to deal with some very grave matters. Dark is someone who can be relied on. Of the people on this list who don't already know about Bourne's past, Dark is the one he'd be most likely to tell.
Belle: A good, intelligent girl who deserves much better than what she has. He really doesn't like a lot of what's happened to her, but he respects her as intelligent enough that he won't argue with what she decides will make her happy, and he'll even help her. He'll never quite trust Beast, though.Haha
The Arbiter: Repentent assassins should stick together. He finds that talking with the Arbiter helps him think about things more fully and strengthens his will. Good things.
...I just realized this turned into the relationship meme. Heh heh.
